Thanks. It now seems to be sorted. I also noticed that I had delays in other games and my Xbox sound was not working at all. Unplugged the lot and then started again and it's all cool now. I also moved it off the top of the tower as it was pretty damned hot in there.
Only thing is, now I'm getting white flecks in Far Cry - while UT 2003 looks fine. The card's a Sapphire 9800 Pro and not overclocked. Sounds like it could be because it's just quite warm. Or because T 2003 is ok, maybe it's this game ?

Nope. Probably your hardware. UT2003 is a featherweight compared with Far Cry in exercising your system. Just buy a can of Freezit ( or similar) from your local electronics store and with Far Cry running and the white fleck visible wander around your video card (and CPU, system memory ) spraying VERY GENTLY until frost just forms on the heatsinks or memory components. Avoid thermal shock ! Observe the video and see when/if the white flecks disappear.

I have never heard of this produce or method, but I seriously would refrain from spraying anything moist into a running machine and I questions anybodies advice and judgement who suggests this.

Don't spray coolant while the machine is on : plain dumb. Turn off the machine, allow to cool. Turn back on and run the game : are the flecks visible straightaway or take a time appear? if there's a delay then its an overheating issue. Turn the graphics options in farcry down to "pathetic" and see if the problem continues. If "yes" then its overheating anyway. If "no" then the higher graphics demands are causing the video chip to overheat. Regardless, if the card is under warranty try and get a replacement.
As a former electronic technician, I can tell you that freeze sprays and hair dryers are the primary tools of troubleshooting heat-related problems. Happens every day in every electronics shop in the world.
