Just what do you mean by "game?"
What may "be over the line" for some, is a moderate compromise for others.

If you really like candid shots, forget that you have a lens and look ant
the Nikon D5000, which has an articulated back. For true candids just hang
it on your neck and look down. Since you don't have it at eye level your
subjects don't usually realize you are snapping.

Too late I already made my purchase but no big deal.

In low light conditions I will not be terribly conspicuous

and in good lighting conditions my "point and shoot" does a good job.

My objective is not so much to "sneak" photos...
if someone clearly does not want their photo taken...
I will honor that.

My main objective is to simply be unobtrusive.

Some people will start to smile and pose when I bring out the camera...
and that's exactly what I try to avoid

One thing I have noticed is that some people will be so engrossed in
what they are doing...they never notice me at all.

I once saw a friend of mine in a local coffee shop
talking quite animatedly.

I walked up to him
popped my camera virtually right in his face
and took a flash picture.

When I saw him a week later I gave him a print
and he looked surprised...he said he had no idea I even took the shot.

f stop of the lens is a moot point as I typically shoot at 4 - 8 so I
have a better depth of field

I've gotten very good results indoors with my 50D. I've been shooting at ISO
1000 and have used ISO 1600 a little. I usually use two Sigma
constant-aperture f/2.8 zooms, an 18-50mm and a 50-150mm.

I also have the 28-105. It's a pretty good outdoor lens (as is the newer
28-135 IS, which my wife has), but I think it's too slow indoors. I brought it
to an indoor event last week, but quickly went back to the Sigmas after a few
test shots.

BTW, I see than one respondent to your OP urged you to shoot JPEG instead of
RAW if you get a 50D. I suggest you ignore that advice.
